The FDA formally defined "Organic" to mean farm producers rely on natural substances and physical, mechanical, or biologically based farming methods to the fullest extent possible. Basically any food product labeled "organic" must meet FDA requirements of having minimal harmful pesticides, antibiotics and must be Non-GMO. (Organic 101)
Its very simple Non-GMO means a food produced without genetic engineering and its ingredients are not derived from GMOs (genetically modified organism). Basically the food wasn't genetically altered in any way.
The Non-GMO Project is a Non-profit organization established to set-up a certification process that tests food products before they can use there Non-GMO label.
When you see a label with the words Sugar-Free, Gluten-Free, Dairy-Free there is a legal definition behind the label. What we have learned is that nothing is truly "Free." The FDA has established minimum levels that would quantify a food product to be labeled "Free."
